Scout Fit: Being healthy isn’t easy

I think we would all agree that living a healthy, balanced lifestyle is not easy. There are so many factors that play into our everyday life which can affect what we eat and our fitness plans. Kids and work, genetics, stress, mental health, and then there are our personal relationships that can really throw things for a loop. There are things we can’t control and there are things we can. And to me it is not about being “skinny”; that’s an unhealthy goal. It’s about being healthy, happy and feeling good about myself from the outside in.

Some of you know me personally and some of you don’t; I wanted to share my “health journey” so to speak. We may own a gym now, and live a pretty clean lifestyle. Scout Style: The Bomber

Dressing this time of year is not an easy task. It may be 60 one day and snowing the next. And, at this point you are probably over your winter clothes. Now is a good time  to find those transitional pieces that can take you into the early spring months. Layering is key!

Bombers are carrying over into Spring in a big way. I found this knit bomber by Cupcakes and Cashmere at Hall’s last week. I knew it would be a great purchase because it is so versatile. I also liked that it wasn’t olive green like every other bomber style I had seen.

I could throw this over a casual dress, would obviously wear it with my jeans, and I could even throw it on with workout pants to go to the gym. I am going to Los Angeles next week, and this will be the perfect lightweight jacket to travel with.… Continue Reading

Our Weekend

We wrapped up another weekend, and it was a good one! Friday night Jon had a night out with some friends so I decided to take the kids to dinner. They are really at great ages, I can take them just about anywhere. And because they go out to dinner with us a lot, they have learned to sit still for an hour or two. I make them sit at the table and talk before dinner, and once they have eaten they can be allowed a device (if we decide to bring one). We don’t always, but sometimes its nice to have an adult conversation without being interrupted 20 times!

We ate at Il Centro, which has AMAZING pizza. They own Minsky’s, but they do their pizza completely different. Il Centro is one of the kids favorite, and ours as well. We always love supporting our small, neighborhood spots.

Scout Fit: Easy + Healthy Recipes

I am getting a hang of this cooking thing. I think the biggest part is planning. I now plan my meals out on Sunday; so I can get everything I need for the week. If I am scrambling to pull stuff together last minute, that is when I end up failing in the kitchen.

Last week I did an AMAZING Maple Soy Glazed salmon recipe from Skinnytaste. It was only 4 ingredients, and it was such a hit! I paired it with Brussel Sprouts (I do mine a little different than how she makes them), but the combo was perfect. It reminds me of the flavors of the miso cod from Nobu. If you don’t like Salmon; this may be a game changer for you!

Tonight I made the Skinnytaste Chicken and Dumpling recipe from her 2nd cookbook. This was sent to me and referred to me by a friend (thanks Sarah!).… Continue Reading

Our Weekend

Happy Monday everyone! Hope you had a good weekend!

We had a low key weekend, mixed with basketball, kids birthday parties and a dinner date with friends.

It was so gloomy and kind of rainy all weekend; we tried to go bowling with the kids Sunday but the place was packed so we ended up going to Tapcade; a restaurant/bar/arcade (mostly geared towards adults) but also a great place for the kids. My son had gone there for a birthday and loved it, so we were excited to try it out.

You pay $5 to play unlimited, old school arcade games. They have a huge beer selection, and excellent bar food. We had the John Wayne tacos and they were amazing. They say kids 6 and over only to play the games, because they don’t allow kids standing on chairs (keep that in  mind if you have younger kids) V could just about see over the controls; so she got a few good games of pac-man in.… Continue Reading

Scout Style: Spring Sweaters

Now is the perfect time to stock up on some spring sweater. They are the perfect transition piece and this year there are great styles to choose from!

I tried this on at Anthropologie this week. Super cute and love the bright pink (which is a hot shade for 2017). And it is on sale right now! Shop it HERE.

Scout Fit: Skinnytaste Recipes

So, I have been sticking to my goal of doing some new recipes. I like websites with recipes (as opposed to a cookbook) because they are easy to reference (on phone, ipad, etc). The Skinnytaste cookbooks came highly recommended, so we have been trying some of her recipes via her site.

Last week I made the Salisbury Steak Meatballs + Cauliflower Mash and it was amazing. Even my pickiest eater ate the meatballs. It didn’t feel overly healthy, but it is high in protein, low in sugar and calories. The cauliflower mash is also great; I will be making both of these again! I found there to be a lot of ingredients and prep for the meatballs so either allow yourself some time or do the chopping/prep in the afternoon and refrigerate. I think start to finish it was about 2 hours, but that was with a handful of interruptions!… Continue Reading

Our Weekend

This has been the longest weekend ever; and it is still not over. I completely forgot about MLK day tomorrow. Hurray. No school again?!!!! (help me God). I feel like my kids haven’t had a full week of school since November. In Kansas City there was threats of a crazy ice storm that never happened. So we hunkered down Friday night and Saturday. I wasn’t feeling that hot either, so it was good to just stay in and be lazy.

Saturday I spent all day cleaning, organizing, and purging. I have a big garage sale in the Spring, so I am getting ready for that as well. It’s always nice to de clutter before a new season. I will be selling some stuff on my instagram: @kcstylescoutcloset so stay tuned for that!
