When I first walked into Anaphora in Prairefire, I was just blown away. Not that we don’t have amazing and unique boutiques in Kansas City. But this was on another level. Every detail perfect. Every piece hand picked with care. The shop was filled with unique, beautiful lines from around the globe. It was definitely unlike anything I had shopped in KC before.

I would describe Anaphora’s selection as timeless sophistication. Not overly trendy, yet not too conservative. Their pieces will never go out of style; which makes them worth every penny. You will be investing in a great cut, a perfectly draped fabric, and clothing that makes you just feel beautiful and put together without trying too hard! Think a mix between the timeless style of Miranda Kerr or Kate Blanchett, the edginess of Kendall Jenner and Emma Roberts with just a touch of Olivia Palermo.

Scout Fit: Healthy Recipes

Hey guys! The last two weeks I did repeat some of my recent favorites but added two new ones to the mix. This Cheeseburger Caserole from Skinnytaste was liked by the kids A LOT but I wouldn’t consider it all that healthy; although it says it is low calories; It was high in carbs and sodium. I think this is a good Sunday night meal, when it’s cold out and you just want something comforting. Also makes great leftovers!

recipe notes: I would go much lighter on the mustard; it was a little overwhelming. And, I used GF noodles to make it a GF meal. 

On Thursday I made her Crockpot  Slow Cooker Burrito Bowls. These were DELISH. Somehow I got my kids to eat them, even though they had beans and veggies in there. Well, actually our power had gone out and it was dark, so maybe that is why??… Continue Reading

Shopping Scout: Athleisure

One thing I think Athleta does very well is Athleisure. These are the clothes that you aren’t working out in. But they are your comfortable, errand running, traveling in, taking your kids to the park clothes.

They have some new Spring pieces that I am loving. I am obsessed with the pale leather jacket paired over a v neck tee with leggings and new balance tennies. I also love their non workout pants; specifically the jogger and their new cargo pant. They just came out with a blazer called the “urban commute blazer” which would be amazing for travel. I would also throw this on over jeans and a tee for client meetings. It’s a great outfit completer!

Scout Fit: Being healthy isn’t easy

I think we would all agree that living a healthy, balanced lifestyle is not easy. There are so many factors that play into our everyday life which can affect what we eat and our fitness plans. Kids and work, genetics, stress, mental health, and then there are our personal relationships that can really throw things for a loop. There are things we can’t control and there are things we can. And to me it is not about being “skinny”; that’s an unhealthy goal. It’s about being healthy, happy and feeling good about myself from the outside in.

Some of you know me personally and some of you don’t; I wanted to share my “health journey” so to speak. We may own a gym now, and live a pretty clean lifestyle. But it wasn’t always that way!  It has been a long road of ups and downs with my weight, bad choices, and health issues to finally get to this place of feeling healthy, confident, and loving the skin I am in.… Continue Reading

Scout Style: The Bomber

Dressing this time of year is not an easy task. It may be 60 one day and snowing the next. And, at this point you are probably over your winter clothes. Now is a good time  to find those transitional pieces that can take you into the early spring months. Layering is key!

Bombers are carrying over into Spring in a big way. I found this knit bomber by Cupcakes and Cashmere at Hall’s last week. I knew it would be a great purchase because it is so versatile. I also liked that it wasn’t olive green like every other bomber style I had seen.

I could throw this over a casual dress, would obviously wear it with my jeans, and I could even throw it on with workout pants to go to the gym. I am going to Los Angeles next week, and this will be the perfect lightweight jacket to travel with.… Continue Reading

Our Weekend

We wrapped up another weekend, and it was a good one! Friday night Jon had a night out with some friends so I decided to take the kids to dinner. They are really at great ages, I can take them just about anywhere. And because they go out to dinner with us a lot, they have learned to sit still for an hour or two. I make them sit at the table and talk before dinner, and once they have eaten they can be allowed a device (if we decide to bring one). We don’t always, but sometimes its nice to have an adult conversation without being interrupted 20 times!

We ate at Il Centro, which has AMAZING pizza. They own Minsky’s, but they do their pizza completely different. Il Centro is one of the kids favorite, and ours as well. We always love supporting our small, neighborhood spots.

Scout Fit: Easy + Healthy Recipes

I am getting a hang of this cooking thing. I think the biggest part is planning. I now plan my meals out on Sunday; so I can get everything I need for the week. If I am scrambling to pull stuff together last minute, that is when I end up failing in the kitchen.

Last week I did an AMAZING Maple Soy Glazed salmon recipe from Skinnytaste. It was only 4 ingredients, and it was such a hit! I paired it with Brussel Sprouts (I do mine a little different than how she makes them), but the combo was perfect. It reminds me of the flavors of the miso cod from Nobu. If you don’t like Salmon; this may be a game changer for you!

Tonight I made the Skinnytaste Chicken and Dumpling recipe from her 2nd cookbook. This was sent to me and referred to me by a friend (thanks Sarah!).… Continue Reading
