Ok, so I have been seriously slacking in the kitchen. I lost my mojo, and I need to get inspired again. BUT, I did make a few recipes recently that I loved.
My friend recommended the Pioneer Woman’s chili recipe and it is TO DIE FOR. Probably the best chili recipe I have made, ever. You can find it HERE.
recipe note * I did not use the “Masa Harina” she asks for in the recipe. But, my friend told me to add a TBSP of brown sugar and dijon mustard to the meat while browning. It was incredibly delicious, and my family at the whole pot in one night!

I feel like Chicken is a weekly staple in our household. It is typically what I make on Monday’s because my husband is at the studio that night and it’s typically an easy recipe. I tried two new chicken recipes in the last two weeks and my kids gobbled it up!
Wellness for the Win is actually a Kansas City blogger that my husband told me about. I was scrolling through her site today and she has a ton of good recipes. I am adding her site to search on a weekly basis. Tonight I did her baked honey garlic chicken nuggets. They have an asian feel to them, and they were delicious. We did GF breadcrumbs which weren’t as great as normal breadcrumbs, but everyone still ate them so I consider that a win.

Hey guys! The last two weeks I did repeat some of my recent favorites but added two new ones to the mix. This Cheeseburger Caserole from Skinnytaste was liked by the kids A LOT but I wouldn’t consider it all that healthy; although it says it is low calories; It was high in carbs and sodium. I think this is a good Sunday night meal, when it’s cold out and you just want something comforting. Also makes great leftovers!
recipe notes: I would go much lighter on the mustard; it was a little overwhelming. And, I used GF noodles to make it a GF meal.

I am getting a hang of this cooking thing. I think the biggest part is planning. I now plan my meals out on Sunday; so I can get everything I need for the week. If I am scrambling to pull stuff together last minute, that is when I end up failing in the kitchen.
Last week I did an AMAZING Maple Soy Glazed salmon recipe from Skinnytaste. It was only 4 ingredients, and it was such a hit! I paired it with Brussel Sprouts (I do mine a little different than how she makes them), but the combo was perfect. It reminds me of the flavors of the miso cod from Nobu. If you don’t like Salmon; this may be a game changer for you!
